Jewish Apple Cake

Jewish Apple Cake

Bake 350 degrees 1hr 15 minutes..sometimes more

3 cups flour
2 cups sugar
1 cup oil
1/4 orange juice or pineapple juice
2 1/2 tsp vanilla
3 tsp baking powder
4 eggs

Beat above ingredients (will be fairly thick)

3or 4 apples...I use Granny Smith....peeled ad cut in sections
mixture of cinnamon and sugar (I keep a mixture on hand..about 1/2 cup sugar w/2 tsp cinnamon)

Grease a tubular pan. Pour some batter, apples, cinnamon mixture..repeat and end with batter on top or apples if you like

Can substitute blueberries, peaches...can add nuts, whatever

Yummmmm..... this will be a great recipe to have on hand since apple picking season is coming up.

Yeah, it's perfect this time of year and a nice change from just apple pie and sauce.

I only have an Angel cake type baking pan ...will that work ?

You can see i never bake lol

how much is a cup? and is that a 1/4 of a cup for the orange or pineapple juice ?

Aja-that looks perfect! Wish I could have a bite. You should bake a lot more often!
EDIT: And custard with it! Brilliant idea! Will have to give that a go myself.
Luke-a cup is 8 fluid oz. Here is a web site that will help you :)

The 1/4 of a cup is for orange or pineapple. Whichever you want to use.

Worth a try luke! I am sure it would work. Nothing like an experiment in the kitchen!

I don't see why it wouldn't work with pineapple --- the only thing I'd suggest is that if you are using tinned pineapple, make sure you drain all the liquid from it first or it might be a bit mushy when you bake it.

Let us know how it turned out :)
