Chicken Pakora

Years back I used to make my own pakora, but I'd forgotten all about it until today. So I gave it another go...

Basically you need to make a thick spiced batter mix. You're supposed to use gram flour, but it worked fine like this:

Plain flour,
milk,
water (just to loosen it up if required)
spice mix,
garlic granules (if not in the spice mix)

Just mix it all together, dip your chicken breast pieces in it, leave for a while, then deep fry the pieces.

Cook for about 4-5 minutes and drain.

Tastes as good as you'd pay money for...

Wow, that sounds like even I, the worst cook on the entire planet, could manage this one.

it really is easy - the spice mix I used is this, about 50g to about 150g of flour, though I do like it quite spicy, so maybe a 5:1 mix would suit others. the most important thing is to make sure the batter is nice and thick. Probably about the consistency of plaster that you'd fill cracks with (check my foodie credentials!)

My local supermarket has finally started stocking gram flour, so I've been able to do things properly...

At the moment I'm chowing down on some parsnip chip/pakora and it's delicious.

You slice and cook the parsnips for five minutes, then dip them into the pakora mix and fry... fantastic!

i remember when i was looking for gram flour it took ages to find - none of the big shops had it. luckily i found it in this little independent food shop. they also do big bags of herbs and spices for less than the price you'll pay in the big shops for one of those little packets

i'll have to try the chicken pakora sometime soon :)

it really is easy - I've now made a big jarful of pre-mixed flour/spices so I just have to take a big spoonful, add some water, then dip whatever into the mix and fry.
