Roasted Root Vegetables

I always have this as a side at Christmas dinner .....and a few other times throughout the year its delish cheap and easy ........

The Stuff

1lb of beets peeled and quartered

1lb of sweet potatoes peeled and quarterd

1lb of baby carrots peeled or large carrots cut small :)

3 or 4 parsnips peeled and cut small

8oz of leeks trimmed and rinsed

2 tablespoons of corn oil and butter (eyeball)

2 teaspoons of fresh thyme

1/2 tsp of crushed red pepper flakes


What to do ......


Heat oven to 375f

Parboil all the veggies except the beets and leeks

In roasting pan combine all all the veggies

In bowl combine the oil and butter thyme and pepper flakes and toss with veggies

Roast the veggies for about 25 mins or untill tender ....season with salt if needed

( like to add salt when i parboil the veggies)

And most of all Enjoy

Thanks for that. I'm going to try it. I've never cooked fresh beets or parsnips so I'm anxious to try this one Aja. You're the best!
