Lemon Souffle Cheesecake

Another light dessert that's perfect in the summer.

1/4 c graham cracker crumbs (or approx. 1-2 graham crackers ground/crumbled)
1 pkg. Sugar Free Lemon Jello (or you can use any other flavour you like.... lime is also nice)
2 c Light Cool Whip whipped topping, thawed
1c 1% or 2% Cottage Cheese
2/3 c boiling water
1 pkg. (brick) or light cream cheese


Spray the bottom and sides of a 9" springform pan or pie plate with non-stick cooking spray then sprinkle with graham cracker crumbs; set aside.

Stir Jello in boiling water for at least two minutes to make sure it's completely dissolved.

In blender add cream cheese, cottage cheese and dissolved jello. Blend until smooth and fully mixed. Pour this mixture into a large bowl and mix in whipped topping. Pour into prepared pan. Sprinkle with extra graham cracker crumbs if desired.

Let sit in fridge for at least 4 hours before serving. Serves 8.
