Remember everything goes into blender
The Stuff
1 large onion chopped
bunch of scallion chopped
4 cloves garlic chopped
inch or 2 of ginger chopped
3 scotch bonnet peppers or haberneros chopped and deseeded
handful of fresh basil
handful of fresh cilantro
A few sprigs of fresh thyme
1 tsp allspice
1 tsp nutmeg
1 tsp black pepper
1 tsp kosher salt
1 tbsp oil
2 tbsp of molasses
small can of tomato puree
juice of 2 limes
I some times add plums and fresh tomatoes its up to u
2 chickens cut up or a mix of legs and breast
what to do
add all ingredients except chicken to blender and blend
clean and skin chicken and score the flesh (that way the marinade sinks in )and put in plastic bowl
pour marinade over chicken and rub into chicken (try and wear rubber gloves peppers are hot )
cover bowl and keep in fridge for at least 12 hours
cook on grill on a medium heat for at least 14 mins a side
serve with rice and salad and most of all a Rum Punch
Oh yeah and enjoy the hell of cutting the chicken up with meat cleaver
ps I think I roasted some red peppers as well to go with the rice ......
