OK Aja ---- you can seriously give this guy some competition. Think about it!

I think EEfan was talking about a cookbook Face :) I have a few Jerk sauce recipes .....But not to where i want it just yet :) Practice makes perfect...... this is just some of the stuff that goes in face......

Ive tried with different kinds of fruit .... with toms ..I will get it to perfection one day :)

3 tablespoons dark rum

2 tablespoons water

1/2 cup malt vinegar

10 green onions, chopped

4 garlic cloves, peeled, chopped

2 tablespoons dried thyme

2 Scotch bonnet peppers with seeds, chopped (I used 1 jalapeño)

2 tablespoons vegetable oil

4 teaspoons ground allspice

4 teaspoons ground ginger

4 teaspoons ground cinnamon

2 teaspoons ground nutmeg

2 teaspoons salt

2 teaspoons ground black pepper

2 teaspoons dark brown sugar

1 cup ketchup

3 tablespoons soy sauce


1/2 cup fresh lime juice
