Salmon Fillets with Crispy Potato Crust

This is a recipe I tried for the first time last night. I am trying to eat more fish, for it's obvious health benefits and it's tastiness. The husband doesn't like fish too much, but he did enjoy this one. So it's been picky eater tested. I served it on top of bed of rice.

1/3 cup fat-free mayo
1/4 cup chopped dill
2 tablespoons Dijon mustard
1 tsp grated lemon zest
1/2 tsp salt
freshly ground pepper to taste
1 cup instant mashed potato flakes (not granular)
4 6 oz salmon fillets, skin removed
lemon wedge (optional)

Combine the mayo, dill, mustard, lemon zest, salt and pepper in a medium bowl. Pour the potato flakes onto a large plate.

Working with one fillet at a time, coat the salmon with the mayo mixture; transfer to potato flakes and turn to coat completely. Place the coated fillet on a plate and repeat with the remaining salmon.

Spray a large nonstick skillet liberally with nonstick spray (or you can used butter as well) and set over medium heat. Add the fillets and cook 2.5 minutes. Flip the fillets one-quarter turn and 2.5 minutes longer. Repeat twice more, until all 4 sides of each fillet are lightly browned and crisp and the fish flakes easily with a fork. Serve at once, with lemon wedges if desired.

I had this today as a left over for lunch as well. I took some of the salmon and mixed it with lettuce, cucumber, a slice hard boiled egg and squeezed half a lemon on top. It was tasty that way as well.

that sounds nice skylace, i've been getting more into fish recently - this is another recipe i'll have to try out :)

but fat free mayo?! whats that then?! :nyer:

:lol: It's healthy. Part of the reason I've lost 16 pounds in 7 weeks!
I don't like mayo much at all myself. I never use it actually. I added a bit more dill to it for my tastes.

16 pounds - thats some going, thats over a stone! congratulations skylace, you must be chuffed - you can treat yourself now to that cadburys cream egg for doing so well :wink2:

i love mayonnaise :)

Sounds good! I love salmon and oddly enough, tried a new salmon recipe over the weekend.... I'll have to post it up as well.

I love fish :) What happens to the potato flakes? and I love Mayo :D sounding good sky ......

I tend to eat more fish in spring and summer .......

The potato flakes just go all nice and crispy. It's great.

I wonder if panko breadcrumbs would work as well? Aja, any thoughts?

I tried this tonight and was jolly good!

In actuality I was going to make it as per the recipe but the missus pulled a bottle of lemon and dill sauce out of the cupboard and I just added the potatoe flakes.

Still, next time I'll probably make it verbatim. In the meantime, its a keeper.

Erm That was skys recipe :D That I really must try soon ......U know eefan I have never used the panko breadcrumbs .....cos i cant get them around here.....But when I can I will give them a try .....
