This is my brother's favorite cake recipe. My mom has had it for years. It is probably one of the best cakes I have tasted.

CHOCOLATE TOWN CAKE

1 cup butter or margarine
1 cup sugar
1 cup packed light brown sugar
1 1/2 tsp vanilla
3 eggs
2 1/2 cups unsifted all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup milk
1 1/2 cups semi-sweet chocolate mini chips

Cream butter or margarine, sugar, brown sugar and vanilla in a large mixing bow until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt; add alternately with milk, beating after each addition. Stir in mini chips. Pour into a well greased and floured 12 cup Bundt pan or 10-inch tube pan. Bake at 350F for 65-70 mins or until cake tester inserted into center comes out clean. Cool 15 mins, remove from pan. Cool COMPLETELY. Glaze with Satiny mini chip Glaze

GLAZE RECIPE

2 Tablespoons sugar
2 Tablespoons water
1/2 cup mini chips

Bring 2 tablespoons sugar and 2 tablespoons water to boil in small saucepan; stir well until sugar is dissolved. Remove from heat. Immediately add 1/2 cup mini chips, stirring until melted. Continue stirring until desired consistency.


You can also make cupcakes with this recipe by filling paper-lined 2 1/2 inch muffin tins with 3/4 of batter. Bake at 350F for 25-30 mins. Cool and frost as you want. It will make about 3 dozen.

I think you only eat this on your "Screw it, I Need Chocolate" days :lol:

PS -- those WW mints are on for 50 cents cheaper a bag here now due to the climbing Cdn. $. Let me know if you need more :)
