1 lb. cod/hake or other firm white fish
1/2 onion sliced
2 bay leafs
12 peppercorns
2-3 cups water
1-2 eggs dependant on size
1 girl size handful of finely chopped parsley
1 guy sise handful of finely chopped cilantro
4 med. shallots finely minced
approx. 2 cups white breadcrumbs (I use panko) ciabatta is a nice one too
1/4 cup melted botter cooled that's 4 tbsp.
6 tbsp. sour cream
2 tbsp. lemon juice
1 tsp. paprika
1/4 tsp. cayenne
salt & pepper to taste
1/4 cup veg. or canola oil & 2 tbsp. butter for cooking
First off in a pan add the sliced onion, bay leafs, pepperorns & water, bring to a simmer, then add raw fish cook until done, dependant on size 5-10 mins.
Remove cooked fish to a large bowl, allow to coll & then gently flake.
Next add ! egg for starters, shallots, approx. 1/4 cup breadcrumb, parsley,sour cream,lemon juice, paprika,cayenne & salt & pepper.
Gently combine all ingredients, if it's too dry add only part of another egg, if too wet add a small amount of breadcrumb. When you have a moist consistency your good to go.
Next combine the cilantro, breadcrumb & salt&pepper on a plate mix together.
I use a dinnerware tablespoon to obtain a medium sized cake, scoop up mixture and roll in breadcrumb mixture, gently form a cake in your hand that is approx. an inch in height & 4 inches in diameter. Place your cakes on a plate and refrigerate at least on hour or overnight so they set.
Bring your pan to the heat, add oil & butter.
Cook cakes approx. 2-3 mins. on each side until golden & serve.
