1 lb. bag of edamame
1/3 cup extra-virgin olive oil
10 large cloves of garlic, peeled and halved lengthwise
Kosher salt
2 1" thick boneless steaks about 8 oz. each
Black pepper
pinch of cayenne pepper
approx. 1 tbs. finely chopped parsley
First shell the edamame preferably while your watching EE or Corrie
In a saucepan over medium heat warm the oil & garlic and a good sized pinch of salt
If the oil bubbles reduce heat you want the garlic to be golden brown
In the meantime bring a medium pot of water to the boil
Generously season the steaks on both sides with salt & pepper.
Heat a large skillet over medium-high heat until hot, then add approx. 2 tbs. of the garlic oil to the pan, then add the steaks. Cook approx 3-4 mins on each side ensuring they have a nice brown crust. When steaks are done put on a platter and let rest about 5 mins. When the steak is almost done salt the pot of water and cook the edamame for approx. 4 mins., drain and transfer to a bowl add 2 tbs. of the garlic oil, cayenne, salt and parsley and toss. Slice the steaks and and serve with the garlic and oil over the top.
