That was an octopus, camoflaged in the 'weeds'... soon as it felt the camera guy was a threat, it swam off....
Obviously the reverse in slo-mo was to show how great it was hidden.

as far as I knew only the cuttlefish could change like that - not octopus...

They're able to also. What's neat is they don't just use it as camo but they also use color changes to communicate with each other.
