i stumbled across this site last night, it converts a youtube video to an mp3 file. just let it know the youtube address and it really quickly converts it and gives you the download link to the finished mp3 file

I like Jdownloader. If you copy the link of the youtube video it give you video and audio download options.

Its also my favourite for downloading files from rapidshare, mediafire, etc.
